As you know, I test new recipes every week, but I also go back and retest recipes that are already on the site based on your feedback. Even if a recipe has 4 stars, I want to understand what didn’t work and see what I can improve.
Your comments really do shape the recipes, so I thought I’d start sharing what I retested each week and what I changed along the way.

Chicken Broccoli Rice Casserole
Retest Reason: This recipe has issues but good flavor. The total cooking time is inconsistent
Retested: I found no issues with the cook time and the doneness. The recipe can definitely work in stages, but it’s also easier to add everything to the casserole dish together, and it still works perfectly fine like that. After retesting, though, I did decide to increase some of the spices to bring out more flavor, especially in the chicken, and to suggest using chicken thighs for more flavor and to prevent the chicken from drying out while baking.

Air Fryer Fish
Retest Reason: "This is a fantastic recipe. My family all agree that it is better than the best fish & chips restaurant. Even our 2 year old granddaughter ate 4 pieces and could have eaten more. The only change we make is that we have to double the amount of panko. I’m a tough customer and I’d give more than 5 stars if that was possible. Yum!"
Retested: The recommended change is absolutely needed. I ran out of panko halfway through breading so I decided to double the panko breadcrumbs as recommended. (don't mind the darker pieces, I walked away 😂)

One Pan Pasta
Retest Reason: "This recipe says you need to use pre-boiled water? Curious if that is a necessary extra step? The other recipes I looked at just say to add water and bring to a boil. Thoughts?"
Retested: First, I retested with Linguine as originally written, and the type I used was bronze cut, which took a very long time to cook when I started with cold water. The broth ended up becoming gummy and unappetizing. So, I retested again with spaghetti. When the water came to a boil, it only took 8-10 minutes to fully cook and the broth was perfect without the pasta having a gummy texture. I also recommend adding the spinach at the end so it retains its color and nutrients, and adding 1 teaspoon of Italian seasoning as an option for more flavor, but it’s not really needed.

These were my successful retests, with the updates I made to get the recipe just right! I have 2 recipes I want to retest because they didn't hit the mark, but I will let you know how they turn out once I retest them! |
