5 Casseroles for Easy Dinners🥘

Hi Reader!

I don’t make casseroles because they’re fancy 😂. I make them because I can get everything into one dish, put it in the oven and usually have enough for leftovers the next day.

So this week I pulled together some of my favorite casserole recipes for those nights when I want dinner to feel a little more hands-off. They’re filling, family-friendly and, most importantly, don’t leave me with a sink full of dishes.

The Best Casseroles

⭐⭐⭐⭐⭐

Ground Beef Casserole

Ground beef, pasta, marinara, fresh basil, and mozzarella baked until golden and bubbly. It’s an easy family dinner and freezer-friendly, too.

⭐⭐⭐⭐⭐

Chicken and Rice Casserole

Chicken breast with mushrooms and onions in a creamy sauce, baked over rice. It skips the canned soup and still comes out creamy and filling.

⭐⭐⭐⭐⭐

Eggplant Pasta Casserole

Eggplant, pasta, marinara, and melty cheese all baked together into a hearty vegetarian dinner that feels filling without being too heavy.

⭐⭐⭐⭐⭐

Chicken Broccoli Rice Casserole

Chicken, broccoli, and rice bake together in one dish with a creamy sauce, so you get a full dinner without cooking everything separately first.

Hint: The pasta goes into the baking dish dry, so there’s one very obvious step you get to skip.

Casserole Night Made Easier

A good casserole is already pretty hands-off, but a few little things can make prep, baking and leftovers even easier.

Tip 1: Use the right size baking dish
Most casseroles are written for a
9×13-inch dish, and using something much smaller or deeper can change the bake time quite a bit.

Tip 2: Let it rest before serving
Give your casserole about 5–10 minutes after it comes out of the oven. It helps everything set up and makes it much easier to scoop.

A Couple Things I Use

9x13-inch Baking Dish

I like having a basic 9×13-inch dish that can go straight from the oven to the table. It’s also the size I use for so many of my casserole recipes.

Silicone Oven Mitts

These are great and especially helpful with heavier casserole dishes because they give me a better grip when I’m pulling a full pan out of the oven.
