Pistachios are one ingredient I never have trouble using up. I grew up eating them in all kinds of Middle Eastern dishes, so they’ve always been a staple in my pantry. And they’re good for so much more than snacking or sprinkling on top of desserts. You can blend them into sauces, use them for a crunchy coating, bake with them or even turn them into your afternoon coffee.
So this week, I’m showing you 5 very different ways to use pistachios. If you’ve got a bag sitting around, start here!

Pistachio Crusted Salmon
A quick 20-minute dinner with a crunchy, citrusy pistachio coating. This is probably the easiest place to start if you usually only use pistachios for sweets.

Pistachio Muffins
Made with pistachio butter and chopped pistachios, plus Greek yogurt for a soft texture. And there’s no green food coloring involved!

Pistachio Latte
Just pistachio cream, espresso and milk. Make it hot as the weather cools down, or keep it iced if you’re not there yet.

Pistachio Pasta
Creamy without heavy cream, with pistachios, lemon, basil and garlic blended right into the sauce.
