Here's what I re-tested this week [August 3]

Hi Reader!
As you know, I test new recipes every week, but I also go back and retest recipes that are already on the site based on your feedback. Even if a recipe has 4 stars, I want to understand what didn’t work and see what I can improve.
Your comments really do shape the recipes, so I thought I’d start sharing what I retested each week and what I changed along the way.

Roasted Butternut Squash Soup
Retest Reason: I just wanted to measure the amount of cups of butternut squash in a large one for accuracy, but also because this is already such a popular recipe on FGF that I wanted to be sure it was ready for the upcoming Fall and soup season!
Retested: The soup was still seasoned well and I noted in the recipe card that a large butternut squash equals about 8 cups.

Quinoa Tabbouleh
Retest Reason: Reader Comment "I made this, but the amount of olive oil and lemon juice was too much for just one cup of quinoa, the oil actually pooled on top. I ended up cooking another cup of quinoa to balance it out."
Retested: After retesting, I didn't find any pooling when immediately prepped, although I did notice a little bit of extra dressing at the bottom after the salad sat out for 20 minutes. So I decided to decrease both the oil and lemon juice from 1/2 cup each to 1/3 cup each to help avoid any excess dressing.

Applesauce Cookies
Retest Reason: Reader Comment "These actually made great muffins! We felt the dough was too runny, so opted to drop it into a muffin pan instead and they turned out delicious!"
Retested: I tested as written and found that they did seem to spread somewhat and they do make a very soft cookie, but the batter was not runny. In my second retest, I used 2 tablespoons coconut oil instead of ¼ cup, and it was pretty much the same taste and consistency. In my third retest, I tried removing all the coconut oil but the cookies stuck to the parchment paper, so I think 2 tablespoons is just perfect.
