As you know, I test new recipes every week, but I also retest recipes already on the site based on your feedback. Even if a recipe has 4 stars, I want to understand what didn’t work and how I can improve it. This week, my kitchen assistant and I retested 3 recipes, and I added one retest from last week as well.

Smoked Salmon Bagel
Retest Reason: Reader comment: "I made this tonight for dinner and served it with a bowl of homemade clam chowder soup. It was very good, but I found that 2 tablespoons of lemon was too much and overpowered the smoked salmon, next time. I’ll just make it with 1 tablespoon of lemon.. thanks for a great recipe.
Retested: I agree! After retesting, it was too much lemon, so I updated the recipe and reduced it to 1 tablespoon. And because I tested it with measured amounts of salt and pepper instead of just "to taste," I updated those to ¼ teaspoon each. I also changed the Persian cucumbers to just 1 cucumber instead of the range of 1-2 for a more precise result overall. Hope this helps!

Chocolate Peanut Butter Bars
Retest Reason: Reader comment was saying that they used almond flour and it was soft, even after freezing.
Retested: I absolutely had to retest this one since it's been such a popular recipe on the site for a long time. The biggest takeaway for almond flour recipes in general is that it can vary by brand. I always use Bob’s Red Mill Super Fine Almond Flour, so I retested it, and it turned out perfect for me with the same consistency as the oat flour version. If needed, add an extra tablespoon at a time until you reach the right consistency (check out my process shots on the site for reference). One thing I noticed, though, is that I used unsalted peanut butter and the base flavor seemed a little flat, so I recommend using creamy peanut butter with salt or adding ¼ teaspoon.

Raspberry Iced Tea
Retest Reason: Reader comment: "I made according to your directions for black tea. Steeping for 10 minutes was entirely too long and ruined the flavor, made it extremely bitter. I had to throw it all away. I tasted it with and without the raspberry and the tea was horrid."
Retested: I retested this one twice. The first was the original recipe for 10 minutes, and honestly, they were right. It was very strong, which I don't hate, because it helps balance the sweetness from the sugar and raspberries, but it's easier for that bitter taste to sneak in. My second retest I steeped for 5 minutes and it was perfect. Because of the sugar and the raspberries' sweetness, I wouldn’t recommend steeping for less than 5 minutes. Because everyone was asking, this is the pitcher I use!

Eggplant Parmesan
Retest Reason: Reader comment: "Great recipe. The only change I would recommend would be to increase the Italian seasoning from 1 to 2 tablespoons."
Retested: I did increase to 2 tablespoons of Italian seasoning instead of 1, and it worked out really well with excellent flavor. I also tweaked the recipe to make this minor change. Everything else still worked out perfectly.
