Soup Tips
A few little tricks for your next pot of soup:
Thicken it naturally. For a thicker soup, mash a few beans or soft vegetables in the pot, or blend a small portion and stir it back in.
Finish with a little brightness. Taste before serving. If the flavor feels flat, a squeeze of lemon or splash of vinegar can perk it up.
Save delicate additions for last. Stir in leafy greens, fresh herbs or cooked pasta near the end so they keep their flavor and texture.
